Introduction

It is possible to make the most varied types of vinaigrette, using a wide array of different vinegars, and even incorporating other aromas, for example, orange, depending on the dish you are making. I love balsamic vinegar, for its sweet-tart flavour. A simple salad of bitter lettuces or rocket, generously drizzled with this vinaigrette, is heavenly!

Instructions

  1. Mince the shallot. Peel and finely mince the shallot.

  2. Mix the ingredients. Place the shallot, olive oil, vinegar, honey, fleur de sel, and pepper in a jar.

  3. Emulsify. Close the jar and shake well, until the dressing emulsifies.
